Gloucestershire has plenty of exciting new openings to try — and this month is jam-packed with unique offerings. Experience the county's first high fidelity listening bar; shop designer brands at a highly-anticipated shopping destination; tackle obstacles at an adrenaline-pumping attraction; and try out the authentic taste of Naples with a slice from the '2025 pizza maker of the year'.

So just in case you missed them, SoGlos rounds up nine of the hottest new spots to open in Gloucestershire in July 2025.

Parler in Cheltenham

A collaborative project from DEYA BreweryFOUR CATS and La Boulangerie Artisan, Gloucestershire's first high fidelity listening lounge, Parler, opened in Cheltenham this July — inspired by the Japanese listening bar trend.

Located on Clarence Street, blending vintage Parisian cafe culture, classic cocktail and wine bar ambience, with an urban taproom edge, Parler also has a focus on analogue music, aiming to create a stylish and sociable space for those who love good music, specialty coffee, quality cocktails, natural wines and fresh craft beer.

Cotswolds Designer Outlet near Tewkesbury

One of the biggest openings in Gloucestershire this year, the county's newest shopping destination, Cotswolds Designer Outlet, finally opened its doors, following years of preparation.

Located just off Junction 9 of the M5 and with more than 50 individual stores, highlights include Gloucestershire-grown KNEAD Bakery, Adidas, Guess, BOSS, Cadbury Outlet, French Connection, ProCook, PUMA, Radley, Reiss, Rituals, Saltrock, Sweaty Betty, Tefal, The Body Shop, The North Face, The Perfume Shop, Timberland, Tommy Hilfiger, Under Armour and more. 

Wingstop in Cheltenham

Good news for fried chicken fans — Gloucestershire's first Wingstop UK has officially opened at The Brewery Quarter in Cheltenham.

Bringing 'chicken wings from the wing experts' to the town's eclectic mix of dining options, customers can tuck into a signature menu of wings, tenders, burgers and sides — all freshly cooked to order, hand-sauced-and-tossed in a choice of 10 distinctive flavours ranging from classic lemon pepper to the fan-favourite, hickory smoked barbecue.

Karak Chaii in Gloucester

Taking Gloucester's cafe culture by storm, Karak Chaii launched on Worcester Street – serving up authentic Indian street food and traditional chai to spicy food fans.

On the drinks menu, expect Karak's signature chai tea, Indian lemonade, fruity coolers with flavoured bubbles, dessert drinks and more. The cafe also serves breakfast dishes including desi shakshuka and masala omelette toasties; alongside authentic street food spanning chicken biryani, roti and pakora bites to Bombay tikka sandwiches and butter chicken rolls.

Sl’ice at BULL in Burford

Bringing a taste of Naples to the Cotswolds, the terrace at BULL hotel in Burford has been transformed into an atmospheric pizza and gelato restaurant, with the launch of Sl'ice.

Brought to life by Chef Michele Pascarella, who was awarded '2025 pizza maker of the year' for Napoli on The Road in Chiswick, the menu features antipasti and salads, alongside pizzas spanning classic favourites from margherita to marinara, with some specials such as double pepperoni and indulgent 'cheesewick' — featuring five cheeses along with homemade cherry tomato jam.

The Hollow Bottom in Guiting Power

It's the start of a fresh chapter for one of the Cotswolds’ most iconic racing pubs, with The Hollow Bottom reopening its door under the stewardship of chefs Nathan Eades and Liam Goff.

Bursting with horse racing heritage, honest food and warm hospitality, guests can expect daily-changing menus with some local favourites, drinks that pay homage to the pub’s heritage, cracking wines and a vibrant warm welcome.

Ultimate Warriors in Gloucester

Previously Ninja Warrior UK, Ultimate Warriors opened this July — just in time for the summer holidays

Alongside exclusive party packages and an on-site cafe, thrill-seekers can experience a whole new second storey of obstacles to tackle from squeezing through rollers to clambering over inflatables and whizzing down slides. There's new challenges to tackle on the ground floor too, with obstacles designed exclusively for Ultimate Warriors. 

Holland Cooper's coffee van in Cheltenham

Holland Cooper has teamed up with La Boulangerie Artisan for a new coffee van launch at No.131 on Cheltenham's Promenade.

The new addition to the town is serving freshly brewed coffee and artisanal pastries daily from 8am on, stationed outside No.131 hotel and restaurant.

AirHop in Gloucester

Another one for the thrill-seekers, promising 'high-flying fun' in time for the summer holidays, AirHop launched its new site on Gloucester Retail Park. 

The new park spans over 30,000 sq ft and is jam-packed with gravity-defying, interconnected trampolines and fun, jumping games.
