'The support, the stories people shared — it reminded us just how iconic this spot is for Gloucester': Dr Foster owners reflect on successful first year

Capping off a successful first year which saw Gloucester's much-loved Dr Foster pub brought back to life, the ART Hospitality team reflects on its many achievements spanning the past 12 months — as well as hinting at what's next on the cards.

Owned by acclaimed restaurant group ART Hospitality and located at the historic Gloucester Docks, Dr Foster serves 'coffee to cocktails and breakfast to beers'. Comfortingly familiar to pubs throughout the Cotswolds, the gastropub offers reservations upstairs, operating with table service; while downstairs, presenting 100 covers, functions in a more 'standard pub style'.

Just under a year ago, Gloucester Docks' iconic pub, Dr Foster, underwent a complete transformation inside and out under new ownership, giving it a new lease of life and restoring the historic Kimberley Warehouse to its former glory.

Following a successful first year, the ART Hospitality team chats to SoGlos, reflecting on the positive milestones along the way from the fantastic reception from Gloucester locals to the buzzing atmosphere that pumps life into the quay, as well as what the future holds for the waterside restaurant.  

You moved into the Dr Foster space almost a year ago now — what have been some of the biggest surprises during this time?

Honestly? Just how much people missed this place. We knew there was a lot of love for Dr Foster but the reaction blew us away. The support, the stories people shared — it reminded us just how iconic this spot is for Gloucester.

Were there any moments that made you think, ‘this is why we opened this place’?

Absolutely. Those warm spring and summer nights, when we open the conservatory doors and the sound spills out on to the quay — that buzz, that atmosphere — it just hits different. You look around and think, yeah, this is exactly what we wanted to bring back.

How did the Gloucester community respond when you opened the doors?

They were amazing. Dr Foster’s always had a place in Gloucester’s hospitality scene. It’s almost like part of the city’s DNA. So when we reopened, people were genuinely excited to see it brought back to life. The support’s been unreal.

Is there a signature dish or drink that’s become part of the restaurant’s identity over the past year?

Sunday roasts were an instant hit — we’re talking proper, traditional pub fare, done well. It just works.

And now the weather’s warming up, steaks have taken centre stage. So we launched Steak Night every Friday — rump steaks and a bottle of wine on the house, or ribeyes with something a bit more premium. It’s already got a following.

Do you have plans to work with any more local brands, bringing fresh, regional flavours to the table?

Definitely. We love working with local producers — Gloucestershire’s packed with talent. It’s a big part of what makes the menu feel connected to where we are. Watch this space.

How do you plan to keep the menu fresh and surprising for returning guests?

We’re always switching things up. The menu changes regularly, and we’ve always got specials running. There’s our fixed-price menus, Steak Night and plenty more in the works.

Are there any special events or seasonal festivals you plan to host at the dockside location in the coming months?

We’re finding more and more people want to use the space for their own celebrations, which is exactly what we hoped for.

That upstairs area is perfect for private events, whether it’s a wedding, engagement party, team drinks, or a summer party. It’s got loads of character, plenty of room and it’s tucked away just enough to feel like something special.

Are there any plans to incorporate workshops, tastings or classes for guests who want to engage more deeply?

It’s something we’re looking into. We’ve had a lot of interest in more interactive experiences — whether it’s tastings, pairings, or chef-led workshops. It’s definitely on the radar.

What’s one goal you’re especially excited about achieving going forward?

We’re really excited about making the conservatory even more of a standout.

We’re looking into adding a log fire to make it extra cosy in the winter and bifold doors that fully open on to the quay for summer, so it can flow straight out to the water. It’s already a great space but we want to make it even more memorable year-round.
