New Cotswolds hotel restaurant launches casual fine dining experience

The Painswick hotel has quietly launched a new restaurant – SAUCE – to bring the flavours of fine dining to visitors and guests without pomp and ceremony.

It's a fresh chapter for Cotswolds hotel The Painswick, with a new restaurant launched for guests and visitors to enjoy informal fine dining.

With a new name and menu, SAUCE, serves sharing plates, feasting boards and elevated small plates — stepping away from more stuffy suppers of the past.

The fresh twist on the dining experience is the brainchild of the boutique hotel's long term head chef Jamie McCallum.

After seven years of culinary creation at the Cotswolds hotel in Painswick he decided to shake things up and introduce an entirely new concept.

Jamie, who lives in Cheltenham, said: 'It’s food that’s been thought about but not over-thought. We want guests to relax, have fun with the menu and just enjoy really great cooking in a beautiful setting.'

The menu includes dishes like barbecued monkfish with curry sauce, charred greens with romesco and smoked eel. 

It also features fun foodie-inspired cocktails including a bread and butter old fashioned and a 'Rococo Garden' — inspired by the neighbouring tourist attraction. 

Jamie says the vibe is less about formality and more about flavour, sociability and seasonality and reflects a shift in the way people want to dine.

He added: 'We wanted to keep everything people love about dining at The Painswick — the charm, the creativity, the incredible produce but give it a new buzz.

'SAUCE is all about accessibility and atmosphere. Come for a cocktail and a few dishes with friends or settle in for the night with our seasonal feasting boards. It’s informal fine dining with heart.'

Having worked for Raymond Blanc, Gordon Ramsay and Marcus Wareing, Jamie says he's developed his own down-to-earth approach and he hopes diners will relish his passion for unfussy finesse.
