Having garnered an enviable reputation over the past seven years, with a host of excellent Tripadvisor and Google reviews for its Cheltenham restaurant, the new Muse Brasserie at Gloucester Quays will continue the winning formula – combining French cooking techniques, Indian influences and seasonal British ingredients in a stylish waterside setting.
A welcome success story in a sector under increasing pressure, the expansion marks an exciting new chapter for one of Gloucestershire’s most celebrated independent restaurants.
Gloucester Quays is the third setting for Muse Brasserie

Born in Cheltenham in 2019, Muse Brasserie has built its reputation with local foodies quietly and confidently, becoming a local favourite before earning national recognition as a TripAdvisor Hidden Gem – given to restaurants which earn outstanding reviews but fly under the radar, remaining less crowded than typical tourist hotspots.
A second location followed in Bristol in 2022 where equally strong reviews have followed over the years and now, completing the brand's south west presence, Muse Brasserie is open at Gloucester Quays.
While each of the three restaurants are rooted in the same values, they all carry their own local character.
The Gloucester Quays experience at Muse Brasserie

The opening of Muse Brasserie at Gloucester Quays has added a refined and elegant dining destination to the ever-popular waterfront development.
Owners say: 'The arrival of Muse has been widely welcomed as a natural complement to the Quays, offering guests something distinctly different: a space where beautiful food, warm hospitality and a genuinely considered atmosphere come together against the backdrop of Gloucester's historic dockside'.

The Gloucester Quays restaurant has been described as bringing Muse's signature blend of French technique and Indian heritage flavours to a setting that feels both relaxed and elegant. Menus are shaped around the best seasonal British produce, complemented by a carefully chosen wine list and a full cocktail and drinks offering.
The space itself makes an immediate impression. Centred around Muse's iconic apple blossom tree, with delicate blossom details woven through a soft pink and teal palette, the interior is warm and distinctive, and feels considered without feeling formal.
Weekend brunch, summer menu and a supper club debut at Muse Brasserie Gloucester Quays

Gloucester guests can also look forward to a weekend brunch service every Saturday and Sunday, and a summer menu launching in July 2026 that continues Muse's tradition of exciting, carefully crafted dishes.
The Gloucester Quays opening also marks the debut of the Muse Supper Club, described as an intimate shared dining experience built around curated seasonal menus and designed to 'bring guests together over exceptional food and conversation'.
Whether the supper club makes its way to Cheltenham and Bristol next is a decision Muse is leaving to its guests.
The story behind Muse Brasserie

Led by founder Limon Rahman and chef partner Franck Grillet, the name Muse was chosen to reflect creativity, imagination and the spark that brings ideas to life – with a restaurant concept which originally began with the owners' shared vision blending different culinary worlds. One trained in Paris, grounded in the precision and heritage of classical French cuisine. The other who developed his craft in India, shaped by vibrant spices and bold flavours.
Together, their perspectives formed the foundation of Muse Brasserie, which from the outset has strived to create a dining experience that feels refined yet approachable, stylish yet welcoming.
