Giffords Circus has opened its pop-up café, Flying Sauce, at its home on Fennells Farm near Stroud.
Dishing up fresh, seasonal dishes from a vintage-style circus wagon, the café with a covered outdoor seating area officially opened for business on Tuesday 25 January 2022 and will be serving breakfast and lunch until Saturday 26 February 2022 – making a welcome return after it first popped up during lockdown in 2020.
The menu includes sourdough bacon sandwiches; Gloucester old spot sausage and mushroom sandwiches; and pastries from Boys Bakery for breakfast, with crispy buttermilk fried chicken brioche buns; sourdough steak sandwiches; smoked sticky short ribs; and hot dogs for lunch – with vegetarian and vegan options available, too.
Executive chef at Giffords Circus, Ols Halas, said ‘We’re really excited to be re-launching Flying Sauce… We will be offering an ever-changing menu, using ingredients from all our local suppliers in the Cotswolds.
‘This is usually a quiet time of the year, so we are excited about being able to be creative and serve food we’ve been itching to try before we hit the road again for this year’s show.’

Flying Sauce café will be open from 8am until 11.30am for breakfast and midday to 3pm for lunch from Tuesday to Saturday until Saturday 26 February 2022 at Fennells Farm in Lypiatt, near Stroud.
