James Martin has launched two restaurants in the Cotswolds at The Lygon Arms.

Marking a fresh chapter in the culinary development of the 600-year-old coaching inn, James Martin’s two new restaurants at The Lygon Arms in Broadway will attract gastronomes from across Gloucestershire and far beyond to the Cotswolds village.

GRILL opened with an official launch party attended by James Martin on Wednesday 1 February 2023, with TAVERN’s launch set for March 2023.

Both new restaurants follow in the footsteps of James Martin’s partnership at The Lygon Arms’ sister hotel in Hampshire, Chewton Glen, where he and his brigade of chefs have created menus at The Kitchen Restaurant & Cookery School since 2017.

Organisers said: ‘Following phenomenal success at sister hotel Chewton Glen, both dining experiences at The Lygon Arms have just gone up a gear fuelled by a new partnership with James Martin’ and are ‘set to become two of the most sought-after restaurants in the Cotswolds’.

Under the roof of a dramatic vaulted ceiling, GRILL will include signature dishes such as Thai-spiced Cornish crab risotto; burnt aubergine, vegan ricotta, with harissa and bulgur wheat; and Laverstoke Buffaloumi with confit Roscoff onion and chilli jam.

There will also be dry-aged Longhorn beef wellington – or the vegetarian alternative of beetroot and Feta wellington; as well as Cotswolds lamb shank; or roasted curry cauliflower with mung bean dhal to tuck into. While from the grill, guests will be able to choose market fish of the day, plus ribeye, sirloin or fillet steak.

For dessert, James Martin’s ‘legendary’ white chocolate and whisky bread and butter pudding is a must for diners with a sweet tooth; with Laverstoke apple and hot tatin, borrowed from The Kitchen at Chewton Glen, also featuring on the pudding menu; alongside Knickerbocker Glory; and Humble Crumble too.

Offering a more relaxed dining experience TAVERN, meanwhile, will be serving simple food to enjoy over a glass of real ale and a read of the newspaper – including Cotswold Ploughman’s; The Lygon sausage roll; shepherd’s pie; and baked aubergine with tabbouleh.

Diners will also be able to book one of the special ‘Dinners with James Martin’ scheduled throughout the year, with exciting plans for events with other celebrity chefs in 2023 too.

Andrew Stembridge, executive director of Iconic Luxury Hotels, which owns The Lygon Arms said: ‘Housed in an incredibly historic building with roots reaching back to the 13th century, The Lygon Arms is a piece of history and James’ additions will add another chapter to the storied hotel.

'Both our team and James have a shared outlook for what we see as the culinary future at The Lygon Arms, one which will incorporate fabulous, top-quality ingredients from the best suppliers. James works with the most renowned butchers, fishmongers, game dealers, farmers, and cheese makers in the country and we look forward to bringing these ingredients to our new and returning guests.’
